I could eat my way across Thailand, no problem. Thing is, flying and I don’t agree. So, I enjoy Thai cuisine in my own kitchen, thankyouverymuch.
Red and green curry paste are staples in my house, as is this dish, which has a Thai-inspired curry sauce. A lean and mild fish, such as Tilapia, is perfect here, lending sweetness and zest. If you prefer Red Snapper or Halibut, those would work here too.

I’ve made this recipe 2 times. Both times we had company and it was a huge hit. So easy to make and delicious, we got rave reviews. i love asparagus so I used more than called for. Thanks Amy!!
