I love this meatloaf. And I make it a lot, especially in the winter months. I think I might be overcompensating for the fact that I never had it growing up. My father hates meatloaf, so my mother never made it. It was years later that I tasted my gradndmother’s meatloaf and it was spectacular. This doesn’t compare to hers, but it’s till pretty damn good.
I think meatloaf is one of those “kitchen sink” dishes, where you can throw just about anything in there and with the right seasonings it will taste good. Seems like I alter this one every time, depending on what I have in the house. Sometimes I use tomato paste, other times I use ketchup. Sometimes I chop the onion, other times I grate it. Sometimes I even add cheese.
I still can’t understand what my father, or anyone else for that matter, doesn’t like about meatloaf. Isn’t it just like one giant hamburger?
