Here you will find wonderful flavors from tomatoes and roasted peppers. And I have always loved the light feeling of this dish, from the fluffy couscous and mint.

This salad is at its finest when the ingredients have had a chance to meld, so allowing it to sit in the refrigerator for a few hours is a good idea. You could make it in the morning and take along with you in the afternoon.

Without any dairy or meat, this salad is low in calorie and healthy, making it perfect for a potluck or picnic and a definite crowd pleaser.
