For those kitchen-challenged (you know who you are!), this is a dish for you.

I had lost my cooking mojo recently and needed something simple, without a necessary trip to the store. Enter the pantry. Just by gathering a few simple ingredients I already had on hand, I came up with this great last minute meal. It doesn’t get much easier.

One of my friends would call it pedestrian, while another would call it a lifesaver. And another would call it comfort food. I just call it yummy.

This is perfect for anytime of year, but I have a feeling I’ll be making it again in the colder months. And, here in Minnesota, that leaves plenty of opportunity.

Vegetarian? Leave out the sausage and serve with bread to mop up the juices.

I like the non-sausage version, too. I think it’s hard to find meat recipes that work well with it and also without, but this sounds really simple and great. Thanks, Amy.

The non-sausage version served with soda bread – and a pint of Guiness – sounds delish!

This looks like it could be served like a Sloppy joe, piled on top of a hamburger bun. I like that you mashed one can of beans but left the other one whole.

Ha! Yes, yes! I found my mojo. And actually made some new delicious/successful recipes this past weekend, to be posted soon.

Mike – I don’t know about the British persuasion. I literally just scanned what I had “in stock” and thought about what might taste good combined. I absolutely believe this recipe would be good with most other SOFT beans; kidney beans, navy, or butter beans would be my first substitutes.

Is this a variation of an old British recipe? Looks very easy, indeed. How do you think it would be with a different variety of bean?
