I recently discovered how wonderful Facebook can be, by reconnecting with my college roommate and long lost friend, Amy F., of 15 years! And it has been awesome to have her back in my life again. I mention Amy in this post because she, like so many others, is trying to cut back on dairy in her family’s diet and eat more healthy. For those of you that share her plight, I added a non-dairy category. (And for those of you that can’t live without cream, butter, or cheese, don’t worry – I can’t either.)
To welcome Amy back into my life, my newly added non-dairy category, and Spring (finally!), I thought I would make something light and with fruit.
This dish was easy, healthy, low calorie, and absolutely delicious. Halibut is a perfect match for this topping because it is so mild. If you use a stronger fish it would over-power the wonderful flavor of the kiwi and oranges.
I served this with a side of couscous, which only took 5 minutes and cooked while the halibut was in the oven.

I made this finally and it was wonderful. So easy, so delicious. A definite keeper.

Good friends and good food. Hurray! And kiwi over fish…Yum! We’ll definitely use this recipe as a change-up to the heartier sauces and rubs we’ve used on fish over the winter months.
I suppose we could all stand to cut back on our dairy intake! Great recipe idea without a heavy cream sauce. And how cool that you are in touch with a friend after 15 years. That’s incredible.

Nice change of pace with the Halibut. Looks good. And I bet you could change up the salsa with different combos of in-season fruit.
This sounds delicious and great as the weather gets warmer. I like that the only cooking part is broiling the fish. Perfect.
