To celebrate Trevor’s 1st birthday, I hemmed and hawed over what tasty treat I was going to serve. I also didn’t know how much I wanted to make, since we weren’t having a big get together for him like we did for Haley (ah, the second kid always gets the shaft.) And there are so many choices! Heaven forbid I just bake a basic chocolate cake, or better yet, be smart like all my other mom friends and buy one at the store; save myself the time and energy. But, that is not my nature. Maybe Trevor wouldn’t have a big blowout party, but I was committed to making him something homemade.

I started to look through my list of staples and wasn’t inspired. I flipped through all the uncharted territory from several cookbooks. Not impressed. Then I jumped online and surfed…and surfed…and surfed…and… THERE IT WAS. Hello Strawberry Pina Colada Cupcakes from Ceres Secrets. I altered the recipe just slightly.

Not your typical birthday cupcakes for a one-year-old I suppose, but I’m not a good judge of such things. Considering that Haley got the Kaluha Coffee Cake for her 2nd birthday, it seemed only appropriate.

Admittedly, as I took a bite, I did feel like it was missing a tiny umbrella, or that we should have, at least, been outside on the patio. Nonetheless, these were absolutely scrumptious and can be enjoyed for any occasion, with or without reggae music. Ceres made them for Valentine’s Day. But seriously, what’s not to like? It’s a cupcake with frosting!

I will also note, that when I put the finishing touches on them, it just didn’t feel right giving Trevor this foo-foo concoction. I remembered Haley had cupcakes on her 1st birthday and they were adorned with fun animal creatures that I worked on for hours. So, I went into the usual parent gender scripting mode. He ended up with worms in dirt.

Everyone was happy.

Paul’s were haphazard because he found the coconut rum. We saw both kids have their first cupcakes. Haley took one bite, then another, and then decided that burying her face in it was the appropriate method of getting to the bottom of things. Trevor just dug in. Either way, Amy, there’s nothing like your freshly baked cupcakes, but I think that three should be the minimum, not the “You’ve had enough!” cut-off. P.S. As good as the pina colada strawberry looks, I’ll go with the more creative worms in dirt. Chewy last longer.

NO! Paul’s haphazard cupcakes never made it to the table. My creations were of dogs and cats.

Another winner, Amy. Frosting isn’t my favorite part of a dessert, but I must say that these two cupcake toppings would pass any test. Let’s have cupcakes for breakfast!

I have to admit, my first thought when I saw these was, “did you really make these”?!! They look so, well, professional! I LOVE the worms in dirt! It really looks like they’re digging through the cupcake. So clever. Sigh…you put me to shame, but I am not the baker in the family. I’ll stick to the savory stuff, and you can make sugary, yummy goodness for me any time!

Begging your pardon ma’am, but for Haley’s first, Paul did the “design” and I just sent two pictures of him and his cupcakes. Nice try, but film only lies half the time.

That said, I’m with Jan on this one. Worms in dirt should be a kid pleaser, if not the whole crowd. I’ll take ‘em without the froo froo stuff on top. Just put it in the middle please, and I’ll have my gummy worms on the side.

Now, where do I upload those pictures….

What?! No Batman cupcakes?! What gives? Well, I’m sure Trevor at least was dressed in a Batman costume or got a Batman shirt. So Happy Bat-Birthday, Trevor! (Ain’t projection grand?)

What fun! Those look so yummy. I think the gender-scripting is hilarious – I do the same thing with my mix of kids. As if they would complain about the color of their cupcake. Ya right.

These look so good and I never thought of the worms and dirt combo. I will be using that! And I love coconut – had a coconut cupcake out at dinner on Friday. Yours look MUCH better.

Wait…there were cupcakes for Trevor?

Sheesh. I just went into the kitchen, saw the rum, took it, and finished watching the ballgame.

I’m not sure which is more fun: Eating these little chunks of delight, or watching your one year-old tear through a cupcake for the first time. Both are terrific.

I’m terribly amused at the alcoholic desserts for your kids’ birthdays. ;) Teasing. I really did find it funny looking at the frou frou picture and then the worms and dirt one though. Haha. Nice job. Happy birthday to your dear boy!
