In terms of illness, what’s worse than the stomach flu? If I wasn’t afflicted with it just this past week, I could think of lots of things. However, since it’s still so fresh in my mind, I’d have to say nothing. Great balls of fire, people. NOT FUN. Add insult to injury – Haley got it, too. But wait, there’s more! Paul was out of town on business (which was cut short, due to my inability to function and feed our kids.)

It is at this time I would like to thank my friend Christy for listening to me die a slow death on the phone, and a huge thanks to Cathy for the speedy market run and Ginger Ale that followed.

48 hours later, life went back to normal. And just in time for Haley’s 4th birthday party, which I think went off without a hitch (other than the ringing in my ears.) Anyone?

Anyway, this was the first thing I made upon getting my appetite back. It’s from one of the special edition Cooking Light magazines that sister Jen sent me a while back. It was also highlighted with a color-coded sticky, including notes (tell me we’re not related…)

Beans? Check. Corn? Check. Tortillas? Check. Parsley? Check. Monterey Jack with Jalapenos…uh…where the hell do you find that? How about Pepper Jack instead? Check. Leftover rotisserie chicken? Well, of course. Check, check.

Easy and fast. Sweetness from the toasted corn and some heat from the cheese. Delish. And honestly, I preferred it without the chicken.

You’re back just in time for Valentine’s Day and Haley’s Birthday- perfect! I’m so glad to hear you’re all better and you must be, if you’re up for pepper jack cheese and anything Cuban. That’s a bounce back!

What’s worse than stomach flu? Sitting next to a guy on Northwest who has stomach flu, but is too big to get out of his seat to get in line for the bathroom and doesn’t have $5 in quarters to gain entry anyway. And then you find out that his last meal was made up of beans an jalapenos!

Pulease. If you want to survive the winter without asphyxiating moi, let’s all have the Oct. 12 Chunky Clam Chowder, please.

Jen – that silly Jay. He’s missing out on so many great meals. Although, obviously he doesn’t think that ;-)

Dani – I miss our tweet conversations! I have got to figure a way to carve out time during the afternoon. A nanny, perhaps? Ha!

Lora – no doubt, right? I always say it’s the hardest part about being a parent…you’re not allowed to get sick. Ever. Nobody gave me this memo before I got pregnant, though.

Lisa – Oh, I like it…blog tag. I love games ;-) As usual, I feel like a loser for taking so long to connect. Won’t be the first time I shrug at my own stupidity. But better late than never. Your pictures make me HUNGRY.

Amy thanks so much for stopping by my blog. I’ve seen your name around too, and like you, always said, I need to check her out, but never had up until now. So now I’m here and holly crap you have a great site. I should have known that anything Melissa and Kim follow must be good. So I’m here to stay whether ya like it or not, and oh one more thing, now it looks like have to spend hours looking back at all your old posts. Ugh. Nothing harder than having to be “on” when you are sick. (AND a birthday party to plan? Lordy.)

This is a nice recipe in that most of the ingredients are either already in the house or totally usable in other things if you don’t use all of it.

ROFL – I totally forgot I had done that with that issue. Yes, I’ve made this (which was why it was color coded with notes), and it is truly yummy. I could have gone without chicken, but I have a husband who, well…”where’s the meat?” is heard when not included in a meal.

Natasha – thanks! Haley’s birthday is actually this Wednesday, we just had the party a few days early since it falls mid-week.

Joanne – how funny…when I called Paul to tell him what was happening, the first thing he said was, “you sure it’s not food poisoning?” Ya, my baby girl is 4. And she’s already talking about turning 5. There is no rest!!

Helen – in hindsight, choosing a recipe that uses a spicy cheese so soon after my ordeal was probably not the smartest ;-) but it didn’t effect me negatively, thank goodness.

Mansi – Send what in…the recipe?

Melissa – Heh. Fingers working faster than the brain. No worries, darlin. I had one with the chicken and another 1/2 one without and I definitely preferred it without, but it could have been due to my mood, maybe my appetite. Honestly, I sort of thought the chicken stole some of the great flavor away from the other ingredients. Just wasn’t necessary.

Natalie – The cumin, maybe? Hmm. I don’t know much about Cuba and therefore it never occurred to me to question it’s title. If it’s truly bothering you, you could contact Cooking Light who named it and let us know what they say!

Not sure why it’s called “Cuban Tostadas”. Cubans don’t eat tortillas (unless it’s the spanish tortilla, a egg and potato omelette), they don’t use corn or jalapenos. Nothing about this recipe is Cuban.

That said, it looks tasty!

As much of a meat eater as I am, I somehow think I would prefer it that way as well. I actually have the ingredients here and could make this for lunch… but I think I have my heart set on a grilled cheese.

I wish I had the ingredients for this for lunch. So sorry you guys were so ill, Amy, but it’s good to know Haley got to enjoy her birthday. Good timing there at least!

YUCK! My family was plagued with the stomach flu last year and nothing compares, especially when it’s one after the other. Then it’s back to work and there’s barely anytime to recoup.

This tostada is absolutely GORGEOUS. I’m surprised your queasy stomach could tolerate the spicy cheese. And you’re right – where would someone find monterey jack with jalapenos? I don’t think I have ever seen that at the market.

Ugh I hate stomach flus. The last time I had one was in college – freshman year. My roommate got it first but swore it was food poisoning from some Italian restaurant we had eaten it. But then I got it. So that eliminated THAT theory.

I’m glad to hear Haley’s B-day party was a hit! Four years old! How exciting.

These tostadas look awesome. I probably would prefer it without the chicken also. But you’ve got appease the men somehow :p
