I haven’t the slightest idea what we’re doing for Memorial Day. But I know there will be grilling involved. Even if it rains. That’s right…just see if you can knock me down, Mother Nature. You don’t scare me!

I keep teetering back and forth between burgers or brats. I might even make my favorite whole trout with garlic black bean sauce (which, btw, has never been posted on this blog. Was that mean of me to even mention it? Sorry.)

I bet you haven’t decided what to make either. Am I right? Right. So, I’m either about to make it a lot easier for you…or a lot harder.

Tilapia with Cherry Salsa – Have a grill? Please say you have a grill. An already flavorful fish, just got that much better with this sweet/savory topping.

Mango Turkey Burgers – not a fish kind of person? Fine. Make these burgers and fall in love. The jerk seasoning is just enough to give it that zing, balancing out the sweet mango.

Grilled Corn with Feta and Lime – it’s just plain unamerican insane not to grill corn on Memorial Day. Thanks again to Greg at Sippity Sup for this great find.

Cherry Tomato Couscous Salad – so simple. So good. And without any dairy or meat, you can feel healthy eating it (up until the time you go back for a 3rd piece of pie.)

Tabbouleh – I said I could eat this every day. Dare me. I dare you to dare me.

Pie Chips with Fruit Salsa – Pie crust in chip form, sprinkled with sugar and cinnamon. Heaven help me. A spoonful of the mixed fruit on top seals the deal.

Apple Crumble Squares – my  favorite pie crumble topping surrounding tart apples. Goodness. Is it Monday yet?

A to Z Bread – this bread…which is really a cake…is the best discovery ever. Start with the base and then use whatever ingredients that flip your skirt up for the A and the Z. The original recipe had 33 combinations listed.

I didn’t even think to look for corn today when we were shopping! Oh now you’ve got me hoping my brother has corn on Monay at the bbq haha.

Tragically, I’ll be five hundred thousand million feet in the air headed back to the east coast on Mem Day. But I’ll be dreaming in shades of bbq. That’s for sure.

Yum, yum, YUM! I <3 summer grilling. Corn is a must have this weekend, I'm telling you. Along with lot of other grilled food and sweets. And alcohol.
