Haley starts Kindergarten tomorrow. Big day. Exciting day. But it also marks summer coming to an end. Sigh…
I love summer. Loooove it. The ease of shorts and flip-flops, afternoons spent at the pool, the bounty of fresh fruit that fills the Farmer’s Market. The heat…the bugs…the sunscreen…pfft. Don’t care. And the four seasons everyone raves about? Pretty, yes. But I would be perfectly fine living in Hawaii. No question.
So, I’ve been playing. Photographing and writing? Not so much.
But I don’t want to deprive you of my latest finds, just because I didn’t take my own pictures. These are dishes that I’ve made recently, some more than once. They are so so good – give them a try!
Emeril’s Chicken Patty Pockets by Emeril at Everyday Food – this is a simple, and super fast summer meal. And a chance to use up the tomato and cucumber in your refrigerator that’s about to go bad. I knew I’d love these the minute I spotted the cumin, cayenne, coriander, and nutmeg. I’ve made these 3 times now.
Spicy Garlic Cashew Chicken by Elise at Simply Recipes – I’ve made this one twice. With cashews, soy sauce, brown sugar, and lime juice, I was pretty much smitten immediately. You can determine the level of heat by the amount of jalapenos you use.
Creamy Chicken Marsala by Lisa at The Cutting Edge of Ordinary – Ah, and this one. Lisa never ever fails me. Neither does Parmesan, cream, and wine. Mmmm. Admittedly, I did use chicken thighs instead of breasts, but only because that’s what I had in the house.
Chicken with Coconut-Lime Peanut Sauce by Marla at Tasty Kitchen – Obviously, I subbed in cashew butter. I knew I’d enjoy this, since I love Asian food. Another one with lime juice and soy sauce. But also? The thai curry paste gives it a little heat, while the coconut milk balances it out. Yummy.
Peach-Whiskey Barbecue Chicken by Ree at The Pioneer Woman – Well, no surprise that I loved this. Peach jam and barbecue sauce? Sweeeet. I did, however, skip the whiskey because I refused to spend $30 for a cup, knowing it would be a long time before I used it again. I didn’t miss the alcohol. The chicken fell off the bone and the sweet sauce soaked into the mashed potatoes, making my belly want more even though there wasn’t any room left.

Ooh, I love all of these ideas! I always need a fresh batch of recipes for all the chicken I have, and this is perfect! Thanks for sharing and inspiring me with a bunch of new ideas.
They all look great! How did the first week of kindergarten go? I am a preK/TK teacher…it is such a huge adjustment for the little guys!
Different and emotional 3 days…I can see why they start mid-week. We survived, though!
Just printed all but one of these recipes. I have no idea when I’ll get to them all, so my recipe folder has expanded once again!
I love that for so many of these, I could just throw in some tofu and it’ll be equally delicious. You’ll know I’ll be making that coconut lime peanut heaven sauce. Hellz.Yeah.
If you move to Hawaii, let me know. I’m SO coming with.

Hah! I’ve been wanting to try both the coconut-lime peanut sauce and Ree’s BBQ peach sauce–looks like you beat me to it! =) Glad to have another vote of confidence telling me to “GO MAKE THESE!”

I can’t help but giggle. I’m making the peach-whiskey barbecue chicken Thursday and the chicken marsala pasta is already on my menu for next week. Heeeeeeeeee.
Great minds ;-) I assume you’re using the whiskey? I’ll be curious to see how that adds to the flavor.
It was delicious, especially with my homemade barbecue sauce. Served with mashed potatoes and Ree’s whiskey glazed carrots. However, I didn’t enjoy it as an August meal, which I should have known going in. Too many dishes, too much stove and oven time.
Looking forward to the marsala next week. I’ve been meaning to make that again for a while. It’s not going to be Lisa’s, but rather my own that I have been meaning to photograph. :)
YES. I should have put a note in there about the hot temps not really jiving with it. I was sweating by the time the mashed potatoes were done. But I’ll definitely make it again in the winter time.
See you don’t always have to cook and bake and photograph to post! Love the other recipes! Your description of that Peach-Whiskey BBQ chicken made my mouth water! Must try!
