Video: Support of Cookies For Kids’ Cancer (Raspberry Pistachio Thumbprints)

Raspberry Pistachio Thumbprints | Very Culinary

It’s that time again – December. And holiday cookies! Let the deluge begin, I say!

I’m kicking things off with one of my favorites, the Thumbprint. They will forever remind me of my best friend’s mom, Doris. She used to make the most amazing spread of Christmas cookies, and I always coveted the snowballs and these. I clearly have a thing for powdered sugar.

This year Very Culinary partnered with OXO to help raise awareness and funding for pediatric cancer through Cookies For Kids’ Cancer. OXO is matching donations up to $100,000. HELLO. It’s such a wonderful cause…and you can help by spreading the word, buying a good cookie spatula, or hosting a bake sale.

For more details, inspiration, and a little smile…watch this sweet video Paul and I made with our friends.

AND CHECK OUT THIS AWESOME GIVEAWAY, COURTESY OF OXO!

Be a good cookie…make these Raspberry Pistachio Thumbprints and host a bake sale today!

Raspberry Pistachio Thumbprints
Makes 20
Prep time: 15 minutes
Cook time: 15 minutes
Cool time: 20 minutes
Finish time: 5 minutes

Ingredients
• 1/2 cup unsalted butter (1 stick), softened
• 1/4 cup powdered sugar
• 1 cup all-purpose flour
• 1/8 teaspoon salt
• 1/2 teaspoon vanilla
• 1/2 cup roasted pistachio nuts, finely ground
• 1/4 cup raspberry jam
• 1 tablespoons powdered sugar

Directions
Preheat oven to 325°F.

In large bowl, beat butter and powdered sugar with an electric mixer on medium speed until creamy. Add in flour, salt, vanilla and pistachios until combined.

Shape dough into 1 1/4-inch balls. Place on a nonstick cookie sheet about 1 inch apart. Press thumb into center of each cookie (but not all the way through), to make an indentation.

Bake 15 to 17 minutes or until set but not browned. Quickly remake indentation with the end of a wooden spoon handle, if necessary. Remove from cookie sheet to cooling rack; cool for at least 20 minutes.

Fill each thumbprint with about 1/2 teaspoon of jam. Sprinkle the powdered over the top.

AMY!!! Hello, sweetheart! I’m trying to start visiting my favorite food blogs again, so you know I had to start with you! We’ll have to catch up via email!
You know I LOVE your videos! You look younger every year!
Oooooh! My favorite holiday cookie is… um… I’m going to go with Mexican Wedding Cake cookies because my mother always made half a batch of red and half a batch of green for Christmas. {smile} And I would choose the Bake Sale Set.
Happy Holidays to you and your family!

My favorite holiday cookie is the peanut butter blossoms. They’re absolutely a hit around Christmas time. They’re easy to make and especially since I am gluten free, they can be made gluten free and taste just as good. I would love to win any of these gifts. OXO is one of my favorite places to shop on the web! Have a great day!!!

My favorite holiday cookies would be either gingerbread cookies or snickerdoodles (I’m trying a recipe for gingerdoodles for the first time this year). I just got married so I’d be ecstatic about any of the three sets but the bake sales set sounds like the one I’d need the most.

My favorite holiday cookies are the fruitcake cookies and forgotten cookies. The fruitcake cookies require so many ingredients that once a year is about the only time I can make them. I would like to win the Baking Boss set, although any of the sets would be a great addition to my kitchen.

I forgot to mention that i would like the Baking Boss set because I desperately need new measuring cups, spatula, whisks, etc. I need a middle-aged baker makeover.

My favorite holiday cookie is a Russian teacake. I love making cookie cutter refrigerator sugar cookies as well. My next-door neighbor’s mom used to make cookies with orange marmalade and chocolate–I am forever looking for a recipe like that to replicate. They were such a good contrast to all the butter/colored sugar varieties.

My favorite holiday cookie is probably a peanut butter ball. They’re just too dangerous to have around other than once a year! As far as the Oxo set (LOVE their products), I think I’d go with the Baking Boss set because I need spatulas and have been wanting a cookbook holder! Very cool giveaway…thanks so much for the opportunity!

Snowballs are my holiday favorite! Would love the pop star set from OXO. The pop containers are the best! Although the other gifts sound really good too! Awesome products.
