When I went away to college, everyone said I would start drinking coffee.

Didn’t happen.

Then I graduated and was thrown to the wolves started working full-time, and everyone swore I would start drinking coffee. 

Didn’t happen.

Then I had my first baby, lost the luxury of sleeping, and everyone was convinced I would start drinking coffee.

Ya. Um. Didn’t happen.

I’ve decided I’m naturally caffeinated ;-)

But you all know I do love coffee flavored food.

While these granola bars might not exactly wake you up in the morning like a black cup of joe, they do provide an easy breakfast alternative or afternoon snack. And maybe if you ate 3 of them, it would feel like drinking coffee…not that I would know anything about eating 3 of them *cough*

Breakfast Buzz Bars
Makes 16
Prep time: 15 minutes

Ingredients
• 3/4 cup plain granola
• 3 1/4 cups Raisin Bran Crunch cereal
• 1/2 cup roasted cashews, chopped small
• 3/4 cup honey
• 1/2 cup cashew butter
• 2 tablespoons fine coffee grounds
• 1 teaspoon cinnamon

Directions
Coat a 9×13 pan with nonstick spray. Set aside.

In a large bowl, combine the granola, cereal, and chopped cashews.

In a medium pot, heat honey until boiling; turn down heat and lightly simmer for 3 minutes. Stir in the cashew butter, coffee grounds, and cinnamon until combined. Add in the granola mixture until combined.

Spread mixture into the 9×13 pan. Let cool slightly, then lay a piece of plastic wrap onto the surface; press down firmly.

Let cool. Cut into bars.

Taken as individual ingredients, these all seem so innocent and almost healthy, don’t they? I love the cashew butter mixed in with the coffee grounds and I’m always a huge fan of cinnamon. Yep, I’m just curious enough that I think I need a batch.

I’ve been addicted to coffee since I was 14…so yeah. But the.boy. doesn’t drink it. I’m still not sure how he survives…but at least now I’ll know what to make him if he ever does start to crash!
