Surely I can fit one more Superbowl-appropriate recipe in before the weekend, especially if it only takes 5 minutes to make, right?!

My mom has been serving up this spread since I was a kid. But I only recently found out from her how simple it is. It’s crazy how just 2 little ingredients can produce something so good, but they do!

This is perfect for game day, an after school snack, or a last minute bite if you have unexpected guests!

Olive Spread
Makes 1 cup
Prep time: 5 minutes

• 1 (8 ounce) package 1/3 less fat cream cheese
• 7 large (or 14 small) pimiento-stuffed green olives

Place both ingredients in a food processor and blend until smooth. Serve with crackers.

Seriously, just two ingredients?? Count me in!! I love olives AND cream cheese so this is a no-brainer for me.

There you go feeding my olive addiction again….. I think I have just enough to make a small batch and part of a baguette in the freezer… lunch!

did you know…..that your grandfather, (Ed) used to make this spread……It was his specialty….and he used to make it every time he came to visit here….

My mom makes something like this, too and I agree that it is super yummy! Definitely great on some crackers – the briney taste of the olives is all you need with the cream cheese. Yum!
