When you’re invited to a party and asked if you can bring something, what do you usually offer up? Bread? An appetizer? The cups and plates? Ice?

I almost always bring a side salad or cake. In real life.

In virtual life, I almost always bring pie. Because, you know, that’s my thing. And today is no different.

Stephie at Eat Your Heart Out had me over <<< absolutely adore her.

I made a list of things you might not already know about me. (How much I love making lists is one of them, but I forgot to put that on the list. #ironic)

Anyway, I also made pie. And it doesn’t get any easier or delicious than this!

Macadamia Nut Butterscotch Cookie Pie
Serves 8
Prep time: 10 minutes
Cook time: 40-45 minutes

Ingredients
• 1 stick of unsalted butter, melted and cooled
• 1 cup granulated sugar
• 1/2 cup all purpose flour
• 2 eggs
• 1 teaspoon vanilla
• 3/4 cup of chopped macadamia nuts
• 1/2 cup white chocolate chips
• 1/2 cup butterscotch chips
• 9 inch Pillsbury refrigerated pie shell

Directions
Preheat oven to 350 degrees.

Mix all ingredients and pour into pie shell.  Place on a cookie sheet and Bake 40-45 minutes. It will still be nice and gooey. If you prefer a firmer texture, let set for a couple of hours before slicing.

Do you pre-bake the refrigerated crust?

I just read the recipe (didn’t really need to after seeing the photo) and I’m desperately trying to figure out how to make this pie without going to the store. I know my daughter has a bag of macadamia nuts in her pantry… maybe I can get her to bring them over & stop on the way for the butterscotch chips. One of these days I’m going to short out my laptop keyboard from all the drooling I do on your site!

Haha, thanks Dani! This pie is so ridiculously easy. Which is good…and bad. Thank goodness it’s not bathing suit weather!
