Presto Pasta Nights: Round-Up #124
Presto Pasta Nights is a weekly event created by Ruth of Once Upon A Feast. It’s a chance to showcase your favorite or newly created pasta recipes. Ruth has been most generous in letting other food bloggers host and I am the lucky one this week. So, let’s get to the yummy 17 (!) entries – listed in the order I received them.
Ratatouille Pasta (c/o Yasmeen at Health Nut)

Yasmeen from Health Nut explains that, "Ratatouille is a classic French side dish made with fresh vegetables and herbs, including egg plants, zucchini, squash and tomatoes. Tossed with pasta, the dish makes a wholesome entrée." I'm in.
Roasted Tomato, Artichoke & Goat Cheese Pasta (c/o Zoe at The Zoe Blog)

Zoe from The Zoe Blog made Roasted Tomato, Artichoke & Goat Cheese Pasta; a tasty light dish that heats up easily for lunch the next day. And with three of my favorite ingredients, I have this on the to-do list.
Spiced Chicken Dumpling Soup with Rice Noodles (c/o Deb at Kahakai Kitchen)

Deb of Kahakai Kitchen says, "the Southeast Asian flavors of ginger and lime juice keep this Spiced Chicken Dumpling Soup refreshing and light, so it works well in warmer weather." I bet this would be great all year round. Good call on adding the rice noodles, Deb!
Zebra Pasta (c/o Giz at Equal Opportunity Kitchen)

How could any kid (or adult) pass up eating something that has such a great name and looks this cool? And I imagine this Zebra Pasta made by Giz at Equal Opportunity Kitchen tastes fantastic too, with its tomatoes, feta cheese, and balsamic vinegar. Yes, please.
Pork Balls Soba Noodle (c/o Ching at Little Corner Of Mine)

Taking care of two little kids while your spouse is away, is no easy task. You want something easy and quick. But it still has to be good! Pork Balls Soba Noodle, from Ching at Little Corner Of Mine, fits the bill. And it's nutritious too - made with ground pork, bok choy, soy sauce, and seaweed.
Red and White Stuffed Shells (c/o Chaya at Comfy Cook)

Comfort food at it's finest! And these Red and White Stuffed Shells, from Chaya over at Comfy Cook, have a special element to them - made with gluten free pasta shells. Perfect for someone with an allergy.
Tandoori Lasagna (c/o Rahin at Lazzat)

This lasagna recipe is unique, as Rahin from Lazzat points out, "it's lasagna with a twist, a fusion of Indian and Italian." Just by looking through the list of ingredients, I can tell this dish has a ton of great flavor. I wish I had a bite right now.
Mexican Lasagna (c/o Debbie at Dining with Debbie)

No such thing as too much lasagna, in my opinion. Debbie from Dining with Debbie discovered this great recipe from the Taste of Home Cooking School. Combining Italian and Mexican ingredients, it's a terrific find.
Pad Thai (c/o Nupur at One Hot Stove)

Nupur from One Hot Stove brings us one of my favorite dishes, Pad Thai. She describes it as "a classic Thai dish of noodles, tofu, scrambled egg and bean sprouts in a sassy sauce, topped with crunchy bits of peanuts." How can anyone not love a recipe with a sassy sauce? YUM.
Spaghetti with Olive Oil, Mushrooms and Slow Roasted Tomatoes

I love, love, love tomatoes; sun dried, sauteed, raw, and slow roasted. Sounds like Hillary from Chew On That feels the same way. She says that, "these tomatoes are baked in olive oil for almost 3 hours, highlighting their natural flavors and creating a gem of a pasta dish." Makes your mouth water, doesn't it?
Turkey Bacon Club Pasta (c/o Katie at One Little Corner Of The World)

I really enjoy a good turkey club sandwich. How could it be better? Convert it into a pasta dish! I love this idea. And Katie over at One Little Corner Of The World was able to stretch her turkey breast tenderloins into two meals, something you know I'm a huge fan of with our limited budget these days.
Meatballs and Pasta – the Jamie Oliver’s way (c/o LK at Food-4 Tots)

I'm an instant fan of LK's at Food-4 Tots who's blog focuses on simple, healthy and practical recipes that are suitable for toddlers. But her recipes aren't just for kids - I bet this Meatballs and Pasta dish would be enjoyed by adults, as well. I cannot wait to make it.
Melon Madness Pasta with Bacon and Feta (c/o Joanne at Eats Well With Others)

Joanne from Eats Well With Others reminded me of an appetizer I made several months ago, which included prosciutto wrapped around honeydew cubes, and served with lime juice and mint. It was yummy with a capital Y. So, Joanne, I am not doubtful of how awesome your pasta dish tastes!
Stir Fry Noodles with leftovers (c/o Daphne at More Than Words)

Daphne from More Than Words has the right attitude. With some standards from the pantry, and items in the frig that need to be used, you can create a fabulous stir-fry dish. Forget about throwing those odds and ends away...have a great meal for dinner, and enough for lunch the next day. No waste. You rock, Daphne.
Pappardelle Pasta with Veal Ragu
(c/o Theresa at The Food Hunter)

Theresa at The Food Hunter adapted this recipe from its original form which called for Corzetti pasta. She also says that "the veal adds a robust flavor to the sauce." I actually have some Pappardelle pasta in my pantry and have had some veal in the freezer, neither of which I've known what to do with. Perfect timing for me!
Penne with Roasted Vegetables and Fresh Pesto
(c/o Jacqueline at Tinned Tomatoes)

Two of my favorite ways to eat vegetables are off the grill or roasted. Live with somebody that won't eat vegetables? Try them roasted and you'll probably get a different reaction. Jacqueline from Tinned Tomatoes knows what I'm talking about. That's what she did with the veggies for this dish...and then topped it off with fresh basil and feta cheese. "A match made in heaven," she calls it. Agreed.

These all look so good. How can I make them all today? I guess I can’t but I would love to be able to do so. I love pasta and I love having these collections so I always have ideas for a meal.
