Blueberry Oatmeal Pancakes

blueberryoatmealpancakes

Usually around 5pm Haley watches me gather up my bowls and utensils, and she asks the proverbial question, “what are you making tonight, Mommy?” This time, when I responded with “pancakes,” she immediately went running around the house yelling “pancakes! pancakes!” This, of course, confirmed I had made the right decision.

The sweet or savory options with pancakes are limitless and contribute to their shear awesomeness. In this case, I adapted a recipe for Oatmeal Cookie Pancakes from Joy The Baker. I substituted the raisins with blueberries, added pecans, and increased their size. They were perfect.

As a parent of two little ones, my life is ruled by routine, but having breakfast food for dinner now and again is a small relief from that. And it’s fun! Pancakes are also a favorite among all age groups, so you’d be hard pressed to find any objections no matter what time of day you serve them.

When we finished eating, Haley made a suggestion for tomorrow night’s dinner. “Maybe we can have cookies?” Uh oh.

So where were you when I was craving pancakes this morning????

TaraAugust 3rd, 2009 at 9:06 pm

Oh ya, we do this at our house…sometimes I’ll even make peanut butter/jelly sammies for dinner. Or we’ll eat on a blanket on the floor, instead of the table. Like an indoor picnic. The kids love it!

I’m the guy who can eat breakfast 24 hours a day, so this sounds excellent to me. But I’ve never had oatmeal pancakes, to my knowlege. How are the different than regular pancakes?

LisaAugust 4th, 2009 at 7:44 am

Wish I had the ingredients and time to makes these this morning. Yum, yum, yum.

AmyAugust 4th, 2009 at 7:48 am

Mike – in addition to the flour, you add some oats. Gives them a slightly nutty flavor.

MikeAugust 4th, 2009 at 7:49 am

“Slightly nutty” huh? Sounds like my family. ;)

Pancakes for dinner are perfect when you want something light on a hot summer’s day, and these look SO delicious. I can’t wait to make them and will probably add a fruit salad on the side. Haley is too funny….I wonder where she gets it!

Cate O'MalleyAugust 4th, 2009 at 9:38 am

Sounds and looks delicious!

JudeAugust 4th, 2009 at 12:02 pm

Sometimes by doing something in an unconventional way will bring lots of excitement to our kids. I don’t see any problem since they are healthy and delicious. Pancake is my son’s favorite too. ;)

LoraAugust 6th, 2009 at 4:09 pm

YEAH for pancakes!! My kids love them and I am convinced they are the perfect disguise for sneaking in healthy food like oatmeal. And calling them cookies… genius! Can’t wait to try this one!

EthanAugust 6th, 2009 at 7:38 pm

Guess what we’re having for dinner!

JoanneAugust 9th, 2009 at 8:49 am

Your daughter sounds adorable! I love having pancakes for dinner. Definitely a guilty pleasure. I love that you subbed in blueberries in these – way to give them a serious anti-oxidant boost!

MarionAugust 11th, 2009 at 1:46 pm

Ha ha ha. How lovely. Maybe we can have cookies, indeed. With a lovely attitude like yours, it sounds like you’ll handle that request just perfectly. Great story. Thanks for sharing it, and for reminding me that I love oat pancakes — and that I have not made them in forever.
