Roast Chicken, 2 Ways

I can’t quite remember when the markets started carrying these gems, but I’ve been devoted ever since. I’m talking about the roast chickens they have slow cooking for hours. Some with a hickory flavor, some Asian, some BBQ style. Every market has their own brand name. I just call them delicious.

My local SuperTarget sells them for $4.99. Five bucks! I love to serve the meat right off the bone with some baked beans or corn on the cob. But recently I got creative, trying to make the bird last longer than one night. Success. Two incredibly yummy, simple dishes, courtesy of the roast chicken.

First up…

Chicken and Spinach Quesadilla

Melted cheese with spinach and mushrooms, sandwiched in between two crispy shells. You can alter the amounts to your taste buds. It's all good.

Second night…

Asian Chicken Lettuce Cups

Asian-Chicken-Lettuce-Cups

No utensils needed here; the lettuce cups are the carrier to your mouth. Use a spicy sauce for added flavor. These were gone way too soon.

If you’re feeding less than four people, you could make the chicken go even farther.

All in favor of the roast chicken, shout “aye!”

I love the roasted chicken from the markets and sometimes use it for Chinese chicken salad.
Can’t wait to try these two recipes, as they are quick and easy and could even be used as appetizers.

Amy, I can always count on you for simple and fast meals…that taste great! These two are especially great because they would work well for lunch, as well as dinner. Awesome. Aye!!

The quesadilla looks amazing. I want one right now! Drool. I will have to try the lettuce cups, too. Though, those might be an appetizer, rather than a meal, if I’m doing them for dinner.

We always order lettuce cups at PF Chang and Fuzio. I can’t believe I’ve never thought of making them myself! They seem pretty easy and perfect for the summer!

those are great…I never thought of doing anything but having chicken and stovetop stuffing and a veggie for an easy meal…but I love that lettuce cup idea…and especially the no utensils..yeah, baby…no utensils works for me!!

AYE! I am so looking forward to trying these two out. Thanks for the great ideas and for saving us some $$. Our supermarket sells out of these roast chicken quickly, but we can find them at Costco too.

I have never bought one of the roast chickens but maybe I should…they are way cheaper than I would have thought! You did such great things with them here. I love those quesadillas. They are totally bookmarked.

I usually sit down with one of these chickens…..and napkin. The meat is so tender and falls off the bone. YUMMY! I polish off the whole thing in one sitting. Brrrppppp.

What a coincidence- I bought a roast chicken just 3 days ago too! I put them in everything! Pasta, rice, sandwiches..etc

I really like the idea of the lettuce cups- great for kids or even for entertaining.

Last night I made your Asian Chicken Lettuce Wrap. I loved it. It reminded me of Brueggers Thai Chicken sandwich I used to get. Yummy.
