Even though it looked really good, the eggplant still had me a bit skeptical. Well, skeptics out there, you need not be. This is REALLY GOOD! I actually added one more tsp. of the vinegar for a touch more tanginess, but that's just a personal thing. SO GOOD! I was finally able to make this yesterday, and I was able to control myself and only eat 1/2 of the recipe!
